May 27- Perfect New Zealand Shortbread A/TX

Learn how to make the perfect shortbread. Shortbread has a rich history and while the classic biscuit originated under the Queen of Scots, Mary, the biscuit made its way to all of the British colonies, including New Zealand, where my great-grandmother, Joan Mary Morgan, started making as one of her signature classics. She used to cream the butter & the sugar with her warm hands, We will replicate her classic recipe. Once we have mastered the technique, we will experiment with some creative varieties inspired by each other! You will leave class with our family shortbread recipe, 1 roll of ready to bake dough of Joan Mary Morgan's classic shortbread and 2 additional versions of your personal creation (think rosemary, lemon, almond, orange, cranberries, pecan...and beyond!).

About Wesley Ellison: !  was raised mostly in Northern California, on butter. My formative years were spent enjoying my mother’s approach to cooking—butter, bulk, simple. Cooking principals that are, as far as I know, revered by all women in charge of feeding four large big-boned children. I also enjoyed a few childhood years spent in my father’s birthplace, Christchurch, New Zealand. This is where my loyalty to homespun, farm-to-table fresh ingredients comes from, I think. Also thanks to the Kiwis and my father: a passion for sugar, dairy and total reckless indulgence. In 32 years, I’ve also been lucky enough to live in Seattle, Los Angeles, Chicago, New York, Ann Arbor, Charlottesville, and now Austin, Texas! The passion stringing these temporary homes (and my life) together, the only substance that keeps me who I am wherever I am: food.
