There are as many types of gumbo as there are Thibodeaux in Louisiana, but the one you’ll find most often simmering on a day-after Thanksgiving Cajun-country stove is Turkey Bone Gumbo, with and Andouille Sausage. 

Join market chef and food writer Maggie Perkins, of Notes from Maggie’s Farm, as she breaks down the basic bones of this iconic dish, beginning with the mighty and indispensable ROUX.
